Pumpkin Recipe for Halloween

Pumpkin Snack Chips

1/2 lb. fresh pumpkin
Bowl of ice water
Oil for deep-fat frying
1/2 tsp. garlic powder
1 1/2 Tbs. salt
Peel pumpkin, cut it in half, and remove the seeds.  Cut the Pumpkin flesh into 2-inch strips, and then use a grater to slice the strips as thinly as possible into potato chips size pieces.  Put the chips into bowl o ice water.  Pat chips dry with a paper towel.  Deep-fry the chips until they are browned. Sprinkle them with garlic powder and salt.

 

Toasted Pumpkin Seeds 

Wait don't throw away those Seeds!  They make a tasty snack.  Spread the seeds (about 1 1/2 cups) in a single layer in a shallow baking pan.  (It's okay to leave some strings and pulp; they add flavor.)  Drizzle with 1/2 tablespoon melted butter and sprinkle with salt or other seasonings of your choice.  Bake at 300 degree, stirring occasionally, 45 minutes or until the seeds are golden brown

 

Pumpkin Ravioli-6 servings

Mix 1 cup ricotta cheese, 1/2 cup canned pumpkin, 1/2 tsp. salt and 1/4 tsp. ground nutmeg; reserve.

Beat 1/4-cup tomato paste, 1 Tbs. vegetable oils an 2 eggs in large bowl.  Add 2 cups all-purpose flour and 1/2 tsp. salt.  Mix with fork until dough forms. (If dry, mix in up to 2 Tbs. water; if sticky, gradually add flour when kneading.)  Knead on lightly floured surface 5 to 10 minutes until smooth and elastic. Cover; let stand 5 min. 

Divide dough into 4 equal parts; roll and shape following paste machine directions, using 2 tsp. pumpkin filling for each ravioli. Place towel; let stand 30 minutes, turning once, until dry.

Cook Ravioli in 4 quarts of boiling water 10 to 15 minutes or until tender; drain carefully. Serve with Spaghetti Sauce. 

 

Pumpkin Pie Recipe

Size of Pie  

6 Tarts

Pumpkin 1/2 Cup

Eggs 1

Milk 1/2 Cup

(Used condensed for a sweater pie)

Sugar 1/8 t

(Brown or white)

Ginger 1/8 t

Nutmeg 1/8 t

Cinnamon 1/2 t

Clove a Dash

Baking time 25 minutes

 

9" Pie

Pumpkin 1 cup

Eggs 2

Milk 2/3 cup

(Used condensed for a sweater pie)

Sugar 2/3 cup

(Brown or white)

Salt 1/4 t

Ginger 1/4 t

Nutmeg 1/4t.

Cinnamon 1 t

Cloves 1/8 t

Baking time 50 minutes

 

10" Pie

Pumpkin 1 1/2 cups

Eggs 3

Milk 1 cup

(Used condensed for a sweater pie)

Sugar 1 cup

(Brown or white)

Salt 3/8 t

Ginger 3/8 t

Nutmeg 3/8 t

Cinnamon 1 1/2 t

Cloves 1/4 t

Baking Time 65 minutes

 

To Prepare Pie Crust

Evenly brush sides, then bottom of a graham cracker crust with 1 beaten egg yolk.  Bake crust for 5 minutes at 375-degree F. and remove from oven. (Put the leftover egg white plus any leftover egg yolk into the pumpkin pie filling.)

 

To Prepare Pumpkin

Use any firm pumpkin flesh scraped from your pumpkin.  Don't use skin or seeds.  Boil until soft (like you would potatoes).  Drain and mash.  Firmly pack pumpkin when measuring, being sure to drain off any excess liquid.

 

To Prepare Pie Filling

Combine pumpkin, eggs, milk, sugar, salt, ginger, nutmeg, cinnamon, and cloves in blender or mixer.  Blend until smooth.  Pour into prepared crust and bake at 375 degree F.
